It depends on the type of industry. Is it mineral or vagetable oil. Better plant control considerable reduce the oil & grease. You can install Oil and grease removal system where ever it is generated.
Vagetable oil can be biodegraded.
Mineral oil are very difficult to degrade. Better way is incineration.

Basically bacterial or enzymatic degradation of O&G in Industrial Waste Water is a slow process requiring substantial impoundment of the water. Oil skimmers, and specialized absorbent pads can help quickly mitigate events with O&G. If you have a big problem, you will need the skimmer, maybe some booms in a pond impoundment.

Depending what you intend to do with the water after treatment will indicate the best treatment for it.
If you want to remove all the oil, grease and any other organic material then Enzyme treatment is possibly not the best solution.

Bacteria produce enzymes. So you can either add bacteria that will continue to produce the enzyme or you can just add the enzyme which will then have to be replenished as needed.

If you are referring to vegetative or animal based fats, oil and grease such as that found in food processing plant, certain bacteria cultures/enzymes are capable of breaking down the more recalcitrant long-chain fatty acids into smaller molecules that are more readily biodegraded by naturally occurring bacteria.
